Spell casting

Do I have to say my spell out loud or can I say it in my head? Likely to be overheard which makes me feel self conscious.

Its doesnt matter. But I think its better to say it out loud

I agree with mystery008. It is better to say it out loud. Just even whispering it if you have to.

You can also write the spell with the intention of casting it, this would probably be a better method than just thinking it.

Depends entirely on the spell. Some require no words at all, others require certain times and dates, others can be done just with the pure intent. It really depends. If it says in the method to say it out loud, Say it out loud.
